In the wonderful world of chocolate, most of us are familiar with the three core types – milk, dark and white. No matter your preference, we’re all at least across this tasty holy trinity as the base point for all manner of crazy confections – after all, chocolate is pretty much the kingpin of the dessert world. Well, we have recently received news that has shaken us to our very cores – a fourth player has entered the game, and she goes by the name of Ruby.


If the thought of a brand-new variety of chocolate seems pretty wild, that’s because it’s not something that happens every day – after all, Ruby chocolate is the first all-new type of chocolate in 80 years. Swiss chocolate manufacturer Barry Callebaut debuted the confection last year at a special panel in China, and the international rollout has been extremely gradual – as in Australia is the fourth country in the world to get a taste. Speaking of taste, Ruby chocolate has its own distinct flavour profile as it is a separate creation to its siblings. The actual chocolate is made from the ruby bean, lending a berry-like flavour and blushing hue to the confection. 

If you’re itching for a taste of the Ruby chocolate phenomenon, you’re in luck – there are a number of spots around southeast Queensland for you to get your fix. Artisan chocolatiers BASIK are teaming up with Brisbane haunt Jack Rabbits for a Ruby-themed multi-sensory degustation experience, featuring eight jaw-dropping courses with four matched boozy beverages. Dessert chain San Churro is also getting in on the action, with a special Ruby chocolate menu and exclusive #RealRuby ticketed events for a closer look. You can also nab some of the good stuff at Couverture and Co. right now, with more stockists expected to pop up as the year goes on.
