Swiss chocolate manufacturer Barry Callebaut debuted the confection last year at a special panel in China, and the international rollout has been extremely gradual – as in Australia is the fourth country in the world to get a taste. Speaking of taste, Ruby chocolate has its own distinct flavour profile as it is a separate creation to its siblings. The actual chocolate is made from the ruby bean, lending a berry-like flavour and blushing hue to the confection.
