If you're partial to a DIY cocktail, keep your home bar cart well stocked for Friday afternoon G&Ts and simply love stepping outside the square when it comes to at-home sips, then it's time you got to know PS Soda and its range of bubbly bottles inspired by native Australian ingredients.


This boutique collection of all-natural handcrafted sodas are an effervescent side gig and creative outlet for awarded Sydney cocktail bar PS40. Using the same amount of thought and progressive techniques they put into their cocktails, the team developed a core range of sodas (regularly joined by limited-edition runs) using nothing artificial and taking inspiration from native Australian ingredients. Our southern friends have been sipping this goodness at home and at various venues for some time, and now PS Soda is available on the Gold Coast (hurrah!) with local stockists of the take-home bottles including Quince and select bottle shops, while the sodas can be found on pour at Stable Coffee Kitchen, Restaurant Labart and more.

The sodas are bottled on site at the PS40 bar, where everything is made and prepared from scratch – from peeling and juicing lemons to toasting wattleseeds. The core series features flavours like Wattle Cola (wattle seeds, kola nut, cinnamon, star anise, nutmeg, lavender, coriander seeds, vanilla, cane sugar and lemon, lime and orange zests), Bush Tonic (lemon myrtle, native lemongrass, lemon and lime zests, quinine and white sugar) and the Smoked Lemonade, a collaboration with popular Sydney establishment LP’s Quality Meats, which uses smoked water, lemon and lime juices and zests, rosemary and Murray River salt. A bunch of limited-edition runs add to the intrigue, featuring seasonal sippers like the Creaming Blood Orange, the Zombie Soda (think pomegranate and pineapple skin) and even a Crumpet Soda made with bread kvass and wild honey.
