It goes without saying that breakfast is the most important meal of the day. If you go to sleep looking forward to your morning meal, allow us to give you something truly tantalising to dream about – breakfast at Nineteen at The Star. This next-level (or level 19 of The Darling, to be specific) breakfast spread is a feast for the senses featuring all of your brekky favourites plus some southern specialties curated by executive chef Uday Huja.


With a menu that’s jam-packed with palate-pleasing eats, there’s certainly nothing average about Nineteen’s breakfast offering. From elevated favourites to inventive southern delights, there’s something for pretty much every taste on the morning menu that’s available daily from 7:00–10:00 am. The selection has been crafted by executive chef Uday Huja and features a mix of healthy options alongside decadent bites – think southern buttermilk biscuits with house-made butter and seasonal jam to Queensland spanner crab omelette with tarragon, hash brown and fermented chilli. There are a bunch of beloved breakfast dishes too like French toast with seasonal fruits, house-made butter and maple syrup, eggs Benedict with mushroom or ham, onion-and-balsamic jam and sourdough, and the chock-full Nineteen Breakfast with eggs, mushrooms, bacon, sausage, hash, tomato and toast.

Pair your brekky selection with a whistle-wetting beverage for the ultimate AM feast. Kick-start your day with the Health Kick juice with apple, pineapple, cucumber, celery and avocado, or perk up with a Vittoria Organic Coffee. Those feeling like a cheeky drink can enjoy sparkling by the glass or one of Nineteen at The Star’s signature breakfast cocktails. There’s a house-made bloody Mary mix with your choice of vodka, a breakfast martini with Tanqueray Seville Orange, Cointreau and lemon, and a breakfast margarita with Herradura, Chambord and marmalade jam. Prosecco fans can wash down their meal with a peach bellini or an orange mimosa. Count us in!
