If you’ve wrapped your laughing tackle around a Costa Taco already, you’ll know the deal. If not, here’s the low-down –locally sourced seasonal ingredients piled onto a pillowy soft corn taco, before being bundled up into a handful of drool-inducing goodness. The concept has been hitting some hugely popular Gold Coast events like Dust Temple’s Summer Courtyard Sessions and Alfred’s Apartment each Tuesday and Friday night, receiving rave reviews from crowds.
For the more permanent Costa Taco outpost, the pair are envisioning a laid-back taqueria styled on Mexico’s informal taco-centred restaurants. With the initial menu set to feature four or five seasonal taco options and the same number of small dish specials, it’ll give diners a chance to savour some authentic Mexican delicacies that don’t often grace your mainstream menus. Locally sourced ingredients will inspire the fare on offer, such as fresh Baja fish tacos in the warmer months. The Costa Taco taqueria in Palm Beach is pencilled to open in early July.
