With its picturesque all-white rendered facade, cacti gardens and mid-century archways, Palm Springs boasts a seriously eye-catching fit-out that is guaranteed to have locals flocking for breakfast bites and brunch that rolls merrily into lunch. The new locale is the handiwork of a group of locals who wanted to bring some California love to the GC. The colossal build is truly a labour of love, with the team having completed much of the fit-out themselves, from the bright white lick of paint through to the plush mint-hued bench-style seating that surrounds the perimeter of the indoor dining room. Palm Springs’ balcony is dotted with high tables and bar-seating, providing the perfect perch to sip coffee and ease into your day, while downstairs the unofficially named ‘Margarita Garden’ features a scattering of round tables that are guaranteed to be hot commodity come summer.
As for the menu, diners can expect Southern Californian-style eats such as an authentic breakfast burrito (not a crunchy kebab-style burrito we’ve become accustomed to on the GC), which is loaded with chorizo sausage, egg, cheddar cheese, avocado salsa, black beans and pickled jalapeno all housed in a deliciously soft tortilla. There’s also a vegan version for meat-free mates and some nourishment by way of the Palms Wholesome Bowl, which is brimming with health. Burger lovers will find their happy place with four stacked selections to sink their teeth into, ranging from a classic bacon-and-egg burg through to a mouth-watering fried-chicken burger (no judgement if you want fried chicken for breakfast). The Gold Coast’s own Therefore Coffee Roasters will be pouring through the crisp white coffee machine alongside a selection of colourful Insta-worthy sips such as golden, matcha and velvet lattes. Fancy something a little harder? Good news, Palm Springs is licensed so you can enjoy a hangover-curing bloody Mary or just dive right in with three different kinds of margarita (chilli, coconut and original). The dreamy, breezy space is open for breakfast, brunch and lunch and officially opens its doors on Friday November 20.
