While Oyster Bar & Grill is a revitalisation, the venue still holds true to its refined and classic roots – and oysters and champagne are still king. The menu now extends to a share-style offering driven by seafood with hints of indulgence and a curated champagne, wine, beer and cocktail list. The intimate 32-seat space promises to offer locals a unique dining experience – it really is a hidden local’s secret – where you can succumb to a little luxury while overlooking the ocean and Sheraton Grand Mirage’s famous lagoons and gardens.
Locally sourced high-end produce and fresh seafood drive the menu at Oyster Bar & Grill, which is split into dishes from the land and the sea. Start classically with fresh oysters topped with prosecco granita, or cooked mornay or kilpatrick style. From the grill you’ll find the likes of barramundi fillets, split barbecued prawns, Moreton Bay bug tails, black Angus tenderloin and double lamb cutlets, well paired with sides of confit-garlic potato puree and heirloom tomato salad. If you really want to step up the opulence, go for the 600-g Cape Grim New York strip for two, served with a bottle of cabernet sauvignon, and finish with the Oyster Bar & Grill signature dessert of warm sticky-date pudding, topped with Zacapa toffee sauce and vanilla-bean ice-cream.
