Bubbo Dessert brings Insta-famous Hong Kong egg waffles to Surfers Paradise

A dessert bar dedicated entirely to authentic Hong Kong-style egg waffles has opened in Surfers Paradise, bringing a pimped-up version of the popular Asian street snack to the heart of the Gold Coast. It's called Bubbo Dessert and it's the first bricks-and-mortar location from the owners of Brisbane-based market stall Brissy Bubble Waffle. While our Brisbane friends have had a taste of the intriguing bubble-wrap-like creations, this sweet new Surfers Paradise venue holds the crown as the coast's first-ever dedicated egg-waffle cafe.


These iconic egg waffles (also known as bubble waffles) are a traditional Hong Kong street food, which are normally served plain and consumed on-the-go by tearing off the individual ‘bubbles’ for a fluffy sweet snack. Much to everyone’s delight, the culinary creations have made their way to Australia – but as you’d expect, they’ve been jazzed up a little. Well, a lot. You’ve most probably seen various colourful, next-level ice-cream-loaded egg-waffles appear on your food-heavy Instagram feed of late – and you can expect exactly that when you visit Bubbo’s cute beachside digs.

Choose from an eye-catching and totally diet-busting menu, which sees the bubble waffles topped in various combinations of ice-cream, fruit, Oreos, Tim Tams, Fruit Loops (yes), Nutella sauce and more. If the original waffle isn’t enough for you, then you can opt for the flavoured waffles, where each individual bubble is filled with a sweet surprise. For those that don’t dig sweets, there’s also a cheese-filled waffle with salad, cherry tomatoes, avocado and creamy mayonnaise to satisfy your savoury self. Despite being loaded with crazy combinations, the Bubbo team take their waffles very seriously – there’s a real art to crafting these crispy-on-the-outside-fluffy-on-the-inside creations, so each eggy waffle is lovingly made fresh to order.
