Seafood is ultimately the hero of Bisque’s menu, with the dishes tweaking depending on the fresh catches that arrive each day. You’ll be choosing between sea-based starters like blue-swimmer-crab bisque with handmade grissini, vol-au-vent topped with local tiger prawns in a creamy-garlic sauce flambeed with Pernod, and seared scallops with confit pork belly, brassicas and calvados sauce. From the land, think duck-liver pate with smoked salmon, house-made pickles and baguette crisps, French onion soup with gruyere croutons and, for the adventurous – traditional escargot in a garlic-brandy butter, encased in golden puff pastry.
For the main event, there’s fish du jour with sauce vierge on sauteed potatoes with snow peas, asparagus and lemon beurre blanc, a Southern France-inspired chilli-prawn linguine, eye-fillet mignon wrapped in Bangalow bacon, and chicken breast filled with Moreton Bay bug and local tiger prawns in a garlic-and-chive cream with sauteed potatoes, snow peas, truffle carrot and chicken jus. A friendly tip – you’ll absolutely want to save room for dessert. Think pear tarte tatin with macadamia ice-cream, chocolate crumble and pear gel, a white-chocolate and passionfruit creme brulee, freshly made profiteroles with Baileys cream, creme caramel with butterscotch snaps, and crepes Suzette with an orange-Cointreau sauce and French-vanilla ice-cream.
