It was back in 1851 when Joseph Seppelt established Seppeltsfield in the Barossa – and fast forward to today, his namesake wine label Seppelt has become renowned for producing established flavours from a coveted collection of Victorian vineyards. The exclusive event at Southport dining space Carmody’s will see Seppelt ambassador Adrian Marchioro lead guests through a carefully selected series of wines paired with a five-course dinner curated by head chef Nathan Hay.
You’ll start with dishes like kombucha, apple and pork pithiviers, before moving onto the seared ahi tuna with kimchi aioli, and the charcoal-grilled quail with a cherry char siu glaze. The main event is the pressed lamb shoulder with herbed potatoes, white anchovy, cavolo nero and speck jus, then you’ll finish with baked plums topped with a wattleseed and oat crunch, milk skin and a yoghurt gelato. Each course is expertly matched with some of Seppelt’s key drops, including the 2013 Salinger Sparkling and the 2016 St Peters Shiraz.
