Every morning at 8:15 am, 91-year-old Gold Coast local Ms Margot arrives at Hilton Surfers Paradise's lobby bar, sits in the same spot and orders the same thing – she has done that every day since 2011. Last week, the hotel unveiled part of its $9-million revamp – which included a brand-new lobby bar. It's a sleek space designed for locals, serving everything from coffee and breakfast to bao buns and late-night cocktails. Its name? Ms Margot's Bar & Eats, a heartfelt nod to the hotel's most frequent (and sophisticated) customer.


For those wondering (we absolutely were), Ms Margot orders four slices of sourdough toast and a long black with milk on the side, every single day. You can copy her order if you like (not a silly idea, she is a glorious 91 years old after all), or you can choose from morning eats like breakfast poke bowls with fresh smoked salmon and edamame, house muesli with seasonal fruits and yoghurt, pancakes topped with grilled banana and berries, and more to enjoy with your daily hit of caffeine.

The Ms Margot’s menu flows effortlessly into all-day dishes like milk-bun tempura bug rolls with cos lettuce and sriracha mayo, grilled king prawns with green papaya, peanuts and a kaffir-lime and coconut dressing, and char-grilled steak with harissa butter, asparagus, tarragon and drunken shallots. You can also indulge in hand-held bar eats like pillow-soft bao buns hugging fillings of fried chicken, crispy pork belly and soft-shell crab, a selection of pizzas (think combinations like confit garlic, fried rosemary, mozzarella and sea salt), and antipasto spreads loaded with prosciutto, bresaola, salami and cheeses. After a late-night sugar hit? Save room for the dessert arancini – sweet, deep-fried rice balls filled with vanilla creme patissiere and a centre of either pistachio, dark chocolate or mixed berry.

Of a morning, you’ll find a quality coffee on pour – but there is a lot more than that behind Ms Margot’s bar, especially after dark. A mostly Australian wine list is on offer alongside tap beers and a long list of cocktails that’ll you want to slowly work your way through across a few visits. Sip the classics or delve into must-try signature concoctions like the ruby-grapefruit-infused Ms Margo-Rita, the Bikini Bellini (vodka, earl-grey syrup and prosecco over Aperol sorbet) and the Agave Good Time – agave-ginger cider, limoncello, apple liqueur, fresh apple and lemon juice.
