Having a ramen bar of his own has been a longtime dream for Daiki, the Fleet team member who stepped up to sling takeaway ramen (that ended up drawing a cult crowd of locals, catch a glimpse of it below) during last year’s lockdown. From June to September this dream will come true, with Roco Ramen taking up residence in the Brunswick location as Fleet takes a short sabbatical. Ramen aficionados will appreciate that the magic is in the broth, and Roco’s ramen will share this focus. Complemented by the abundant fresh produce of the Northern Rivers region, Daiki employs a range of traditional methods that lend the ramen that deep flavour that truly makes it special.
Each Roco diner is treated to a set menu that will include ramen and some small snacks, with the option to add more specials if desired. Of course, a worthy beverage pairing is essential and will be skilfully selected by Fleet barman Robert Mudge, with a list focusing on artisan sake, spirits, beer and wines alongside delectable Japanese-inspired cocktails and non-alcoholic sodas. Roco will run from June to September, before Fleet reopens with an exciting new lease on life (and new, streamlined booking system – hurrah!). You can secure a booking to experience the chef’s expertise on the first of each month, when the dates for the following month are released. Be quick, as sittings for the pint-sized locale are sought after and sell out.
