After spending much of his professional life heavily involved in the coffee industry across both Australia and London, Tim Casagrande (who has held positions with key roasters Single O and Marvell Street) and wife Candice finally set out to create a cafe of their own. You’ll find Tim behind the machine passionately crafting cups of specialty brews on the daily, while chef Joshua Garrard, formerly of Nu Nu Palm Cove and Brisbane’s Gerard’s Bistro, dishes up a concise all-day food menu.
All of the ingredients are spray free and sourced directly from northern New South Wales producer Farmer Foster. You can start the day with gluten-free and vegan organic-oat bircher with seasonal fruits and macadamia milk, or a hearty thick-cut-bacon and egg roll with cheddar, romesco and rocket. There’s the almost-too-pretty-to-eat gluten-free buckwheat waffles with strawberries, plum, coconut and cocoa, as well as simple eggs on toast and the colourful Nourish Bowl topped with cauliflower fritters. Highline’s bright and sleek new space is certainly a far cry from its predecessor – and while it’s quaint, there are plans to expand seating into the back area (similar to Barefoot’s original set up) in the near future.
