For this instalment of The Edibles, we documented the confit tuna at Bar Chico. 

Bar Chico on Tedder Avenue in Main Beach is described as a melting pot of influences from the Mediterranean, Asia and the Middle East. Head chef Darren Baranello has worked in some of the best kitchens in the world from Marchetti’s to MONA to NOBU. The confit tuna with heirloom tomato, cucumber, olive, edamame, jalapeño and shiso salsa is a delicious, zesty and vibrant dish with all the right sweet and spicy notes plus a hint of acidity. Rumour has it that Robert De Niro tried this creation of Darren’s at NOBU and immediately ordered another – it was that good! Peach is added as a seasonal ingredient to complement the tastes of summer.
