Champagne and oysters – say hello to the new-look Tropic Vice

Since opening in October of 2021, Tropic Vice, perched above the bustling Nobby Beach strip, has become a favourite sip spot among locals drawn to the bar's dreamy sun-drenched Palm-Springs-meets-Miami vibe, crafted cocktails and 'Florribean' cuisine. After a challenging 2022, the venue's owner Jimmy Tantsis-Hall was faced with a tough decision – renovate or roll the dice on another season of rain (thanks a bunch, La Niña). Fortunately for us, he chose the former. After an extensive five-month hiatus, get ready to meet the brand-new Tropic Vice …

The venue above the Nobby Beach strip was always meant to be here for a good time, not a long one. Throughout its relatively short lifespan, the space home to Tropic Vice has certainly seen its fair share of changes. From the hessian-draped Split to the very early days of Tropic Vice, it’s been quite the metamorphosis. Now, thanks to an extension in the lease, the venue’s owner Jimmy Tantsis-Hall has unveiled the most impressive incarnation yet – a complete floor-to-ceiling renovation that has added a roof, a striking rendered back-lit bar and cushioned booths, elevating the look and feel to become the venue Jimmy always envisioned. “This is the Tropic Vice I’ve always wanted,” Jimmy says. “It’s more of a classy establishment, everything has been designed for the customer experience. From the moment you walk in and sit down, to when you’re served, when you have drinks, when you eat, everything is about the experience.” The 200-seater offers a variety of perches, from cosy lawn-style high tables and stools to the new cushioned booths and long tables that extend along the perimeter of the balcony.

It isn’t just the look and feel that is new, the menu and drinks selection has also been reimagined. “It’s a similar style, we’ve just made things yummier.” says Jimmy of the new eats and sips. Those in the mood for a selection of light bites can slurp back oysters (natural or with a watermelon and Jamaican chilli vinaigrette) and pick at plates of tropical kingfish ceviche and bug rolls, while those who prefer something a little more substantial can munch on sliders and tacos. The drinks are what really excites Jimmy, who has a background managing bars in Melbourne. For a refreshing sip, opt for the Summer Zest (gin, elderflower liqueur, apple juice, lemon juice, cucumber and soda) or Vitamin Sea (gin, Cointreau, lime, grapefruit, pineapple, soda), or skip straight to the margarita section, which features four different kinds including spicy mango, coconut, lychee and chilli and elderflower variations. Jimmy has grand plans for the new Tropic Vice including big-name DJs, wine nights and special events. Before next summer, there’s also a plan to construct a rooftop podium that will dial up the elegance once again to become a sophisticated dining and cocktail setting like no other. The upper level podium will be part of a second stage, which is expected to be completed later in the year.
