As the Northern Rivers dining scene continues to flourish, chefs from across Australia have been drawn to the region like moths to a flame. The latest chef to make the move is Tim Goegan, who previously led the charge at Andrew McConnell’s celebrated Melbourne-based venues Gimlet and Supernormal. With a background in fine dining, Tim is set to bring an exciting new dimension to The Eltham’s classic pub fare. Known for utilising seasonal, local ingredients to create refreshingly uncomplicated dishes, Tim’s approach to The Eltham menu will respect its old faithfuls but kick things up a notch – think flatbread with seaweed butter and saltbush for a massive umami hit.
As part of his new gig, Tim will be adding a clutch of new and interesting items to the venue’s specials board that will spotlight Northern Rivers’ rich bounty of produce. The new appointment is just one part of The Eltham’s owners Matt Rabbidge and Luke Sullivan’s grand plans for 2022. The ambitious pair have plans for events, live music and food-focused pop-ups starting with a Cantonese-style barbecue in early April with celebrated chef Louis Tikram. From mid-year, The Eltham is also kicking off its ‘Pub Swap’ series, bringing chefs from other pubs across the country for weekend kitchen takeovers.
