The Collective dining experience to open in Palm Beach

The Gold Coast’s best-kept secret is out – The Collective in Palm Beach will open its doors before Christmas. The new 300-seat foodie destination will see five new restaurants and a rooftop bar collaborate to create an innovative new dining experience along the Gold Coast Highway. That’s right, just when we all thought Palmy was really peaking – in comes The Collective.


Popular Mermaid Beach burger joint and American food hub Easy Street Diner will be opening its second venue, called Luckies Diner, in the new space. The owners of former Kirra Beach hot spot Bread n Butter are also in the mix with a new woodfired pizza and tapas eatery called The Italian Job. The remaining three restaurant spaces will be run by The Collective in conjunction with some of the city’s top chef’s, including former Mamasan Kitchen + Bar chef Vincent Seng who will head up Asian-fusion restaurant Umami, which will operate alongside Calavera, an authentic Mexican restaurant, and The Kitchen @ The Collective, which will serve modern-Australian share plates. Currently under construction on the site of the former Palm Beach post office, the innovative open-plan space is being transformed into an interactive culinary marketplace, offering the option for communal dining with table service, takeaway and local-area delivery. Oh, and there will be a rooftop bar with 360-degree views. We know what you’re thinking – hellllo summer.

What’s going on at The Collective is truly unique, and it’s all the brainchild of Gold Coast hospitality guru Jeremy Davidson along with Chloe and Wayne Hubbard. Basically, you’ll be able go there with a group of friends, get a feel for your appetite with the open and interactive kitchens of each restaurant, take a seat and order what you wish from the collaborative menu. One person might order Mexican from Calavera, the other might be in the mood for a cheeseburger from Luckies Diner – you order what you want from your table and pay together at the end, just as you would at a regular restaurant. It’s like all of your favourite cuisines rolled into one open space – so there’s no more deciding where to eat. It’s all here. The cooperative dining environment will see each restaurant operating collaboratively seven days a week from 12:00–9:00 pm, with the exception of The Kitchen, which will also serve breakfast and coffee daily from 7:00 am. The news of The Collective has us pretty pumped … as if we weren’t already vibing on Palm Beach enough though (Bstow, 8th Ave Terrace and Wildernis, we’re looking at you).
