The culinary landscape has evolved tremendously over the last couple of years, but once you begin to stray from the beachside hubs, the options tend to become increasingly fewer the further inland you go. If you happen to reside in or around Varsity Lakes, we have some excellent news – The Brooklyn Wine + Tapas is here to elevate date nights, post-work wines and weekend get-togethers. Take a peek at this impressive newcomer ...


It’s not often you discover a venue that is equally as sophisticated as it is approachable, as worldly as it is familiar, and refined as it is relaxed, but The Brooklyn Wine + Tapas is all of those things. The stunning new sip spot has completely transformed the vacant space at the base of the Brooklyn @ Varsity building into a lavish bar and restaurant that is fated to become a destination in its own right. The impressive new tipple temple is the second venue from husband-and-wife dream team Shaun Dunn and Leisa Provost, who also own the neighbouring Oscar Italia. While Oscar was envisaged as a congenial neighbourhood eatery, The Brooklyn Tapas + Wine is here to elevate the entire dining experience – from the moment you step foot through the doors to the moment you leave. Debuting a luxe palette of emerald-green, black and brushed gold, The Brooklyn is opulent without being ostentatious. In fact, most of the decorative elements (including the Persian rugs, the books and the Chesterfields) have been plucked from Leisa and Shaun’s own private collections.The Brooklyn Wine + Tapas bar has been carved into different areas that are intended to cater to different moods and whims. The Parlour, for example, is the perfect place to sip an aperitif before moving into the main dining area, which is fittingly referred to as the Grand Dining Room. Skirting the edge is The Snug, an intimate date-night nook and at the far end of the venue, you’ll spy The Library – a flexible space that can be used as an extension of the main restaurant as well as a private function area. There is also a private dining room with its own dedicated wait staff, for those extra-special occasions. Those in the mood for a casual bite and a beer can pull up a stool at one of the high tables or perch themselves at the bar. Here, you won’t get hurried out the door the moment you’ve devoured the last bite of dessert, the whole idea of the different spaces is that you can move through the different areas as your evening progresses. When it comes to the fare, the accomplished team of chefs have meticulously crafted an opening menu that intentionally eases you outside of your culinary comfort zone. Described as tapas with an international flair, diners can bite into delightfully crispy rice squares topped with ponzu-soaked tuna, burrata with prosciutto, pea puree, chilli and mint, and pepper-crusted kangaroo fillet that arrives at your table under a smokey cloche to highlight the sensory flavour of the paperbark. Larger plates include a rich pork belly with mascarpone and fennel puree and a butter-poached lobster, which is every bit as indulgent as it sounds. The drinks selection is equally as worldly with a geographically diverse wine list, craft beers and perfectly curated cocktails.
