Vegemite and cheese toasties, snags in bread topped with a squirt of tomato sauce, and Zooper Dooper ice-blocks on a hot summer day – these are the classic tastes of the quintessential Australian childhood. There was once a time when a box of Jatz and a can of Pasito was an acceptable lunch, but then we all grew up (as you do) and our tastebuds became more refined. Though, you can't beat that feeling of being transported back to simpler times with just a bite or sip of one of your childhood favourites. It's that sense of nostalgia that is the inspiration behind the coast's newest watering hole, Rosella's – an Australiana bar that gives a fun and delicious nod to times gone by.


The details
You’ll find Rosella’s in the former hairdresser’s space along the Gold Coast Highway in Burleigh – just near Iku and Mr Hizola’s. The quaint location has been carefully transformed into a 34-seat bar that is equipped with classic Australiana vibes and plenty of personality. We’ll point out that it’s not about rubber thongs, singlets and VB tinnies  – there’s nothing stereotypically ‘ocker’ going on here, rather it’s more of a refined representation of iconic Australian cuisine and a modern take on childhood nostalgia – with a good dose of tongue-in-cheek humour on the side.


The food
It’s all about bar snacks and small plates at Rosella’s, with classics like Vegemite sambos and Bunnings snags given a contemporary overhaul with the use of native Australian ingredients. You can bite into piping-hot jaffles with fillings like Vegemite, cheddar and wattleseed butter, and braised pulled lamb with soft herbed cheese and spiced chutney. If you order a round of fresh local oysters, which come topped with native finger lime and shaved macadamia, it’ll arrive ‘smoko style’ on ice inside a styrofoam esky. The Rosella’s take on a sausage in bread is the Bug Sambo with caramelised onions, fresh dill and paprika aioli, while the classic Aussie beef burger has been given a raw spin, served in the form of beef tartare with egg, beetroot, native greens and baby pickles atop crostini bread. There’s also snacks like creamy onion dip with crisp breads, bush olives and Vegemite-infused beef jerky, as well as a Kakadu plum and apple jaffle with ice-cream for a sweet finisher.

The bar
Cocktail wizard and co-owner Jack Connor is heading the bar offering, which, much like the food, respectfully balances native Australian ingredients and nostalgic elements. Think fun and colourful concoctions like the signature Rosella cocktail with vodka, Australian bitters, rosella jam, lemon and lilly pilly, along with surefire favourites like the Pasito gimlet, the Zooper Dooper sbagliato (using house-made Zooper Dooper syrup), lamington espresso martinis and the aptly named Ironman, which combines Beenleigh white rum and Bundaberg small-batch rum with lime, banana and Nutri-Grain orgeat. You’ll find the likes of Melbourne Bitter pouring on tap plus tins of XXXX Gold, Fosters (the way to our heart) and local craft beers. As you’d expect, the cellar list is all Australian, with a lean toward natural and minimal-intervention varieties from small-scale producers.
