After a long, long hiatus, the first wave of post-Covid international holiday snaps has begun to filter onto our Instagram feeds, igniting a serious case of wanderlust. If you too are daydreaming of a sun-soaked sojourn to the south of France, we have something that might fill the void – Sanctuary Cove has welcomed a French-inspired artisan boulangerie and salon de thé (tea room) that feels like it would be right at home along Boulevard de la Croisette in Cannes. Here's everything you need to know about this northern newcomer ...


If your passport is currently covered in a thick layer of dust, a trip to Rise Bakery at Sanctuary Cove is the next best thing. The primo patisserie and artisan bakery is the handiwork of chefs Adrien Marcinowski and Maxime Bournazel, who were immediately drawn to the location for its stark similarities to the south of France. Boats bobbing over the water in the nearby marina provides a mesmerising view for sipping champagne and devouring croissants, a union, we’re told, is a match made in culinary heaven. The strikingly beautiful space was designed by Brisbane’s Lowry Group and features a sizeable display cabinet brimming with buttery baked happiness, gorgeous mirrored archways and at the end, a seriously inviting champagne bar that leads out to an outdoor terrace with seating for 25. Strategically placed windows provide a glimpse into Rise Bakery’s engine room, which is where you can marvel at the maestros hard at work as they endeavour to replenish the cabinet. We could go on and on about the fit-out, but we know you’re here for one reason – the baked goods, so let’s cut to the chase, shall we?

Rise Bakery’s menu showcases a selection of traditional, well-executed French classics that are inspired by Adrien’s own childhood memories of Sunday morning market trips with his parents in his hometown of Troyes, France. Even as a child, Adrien was besotted with baked goods and harboured ambitions of becoming a baker and a pastry chef, which ultimately brought him to Brisbane, much to the delight of local croissant connoisseurs. The team at Rise Bakery preps and bakes absolutely everything fresh in-house daily. Among the sophisticated offering is sourdough that takes three days to create, elevated croissants, pain au chocolat, fruit-topped danishes and soon-to-be kouign-amann. Those who prefer savoury snacks aren’t forgotten, with a range of quiches, pies and sandwiches. Pair your pastry with a Tavalon tea or a caffeinated sip from Brisbane’s Bear Bones Coffee. Adrien and Maxime have grand plans to introduce a curated selection of bubbles as well as expand the edible offering to include a high-tea experience. Suffice to say, we’re excited.
