Fire up ye olde oven, friends, as Pepe Saya’s newest make-at-home creation is one smart cookie. The butter-loving brainiacs teamed up with Three Mills Bakery in Canberra (which use Pepe Saya butter in all of its baked treats) to create the decadent butterscotch-rye dough, which is made with Pepe Saya cultured butter and house-milled rye flour, then finished with an indulgent butterscotch-miso centre.
You don’t have to be a Nigella-level kitchen genius to whip up these cookies, as they are super simple to make. All you have to do is cut the log of dough into the size you would like, pop them in the oven for nine minutes, pull them out and pipe on the pre-made butterscotch filling, then pop it back in the oven for a few minutes.
