Pavement Whispers: an Australiana bar, Ben Devlin’s first venture and secret watering holes

From whispers of Zooper Dooper cocktails to Pottsville dining spots, The Weekend Edition Gold Coast is always on the search for the latest news, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …

Pipit
Renowned chef Ben Devlin will soon leave Paper Daisy to open his first solo venue, a 40-seat restaurant in the quaint northern New South Wales town of Pottsville named Pipit. A fit-out is underway for the site on Coronation Avenue (Pottsville’s main street), with the dining space due to open around late March. We’re told to expect a relaxed and friendly vibe, with a focus on woodfired cooking and quality wine. Pipit’s al la carte and tasting menus will showcase Ben’s strong connection to Northern Rivers farmers and producers, shining the light on the region’s best produce through surprising and balanced flavours. An open kitchen will be the hero of Pipit, with the space designed to offer an interactive experience between diners, chefs and staff. Pipit is not far off, we’ll have a more detailed look inside soon!

Eddy + Wolff
The team behind popular Vietnamese dining spot Can Tho Kitchen Bar in Runaway Bay has announced a secretive new venue – a quaint 22-seat bar named Eddy + Wolff. Most of the details, including the location, are being kept tightly under wraps for now, but we’re told it’ll be cosy, intimate and off the beaten track – similar to the small bars found in the backstreets of Tokyo or Hong Kong. As for the food, expect true and authentic Asian-inspired eats, influenced by owners Tara and Vien’s travels throughout Asia. Eddy + Wolff is looking at an opening date of late-February. We’ll keep you posted.

Rosella’s
Like the sound of Zooper Dooper cocktails? Well, expect that and plenty more nostalgic delights from Australiana-themed bar Rosella’s, which will be opening in Burleigh this month (it’s getting very close). Taking the former hairdresser space in between Mr Hizola’s and the tattoo parlour, Rosella’s is a small bar designed to ignite a sense of nostalgia and bring back childhood memories through cocktails and bar snacks. We’re talking cocktails like ‘pavlova-coladas’, Pasito gimlets (hello), lamington espresso martinis, and fairy floss-topped Zooper Dooper sbagliatos. The food side of things will be heavily influenced by native ingredients, with the menu to be dotted with the likes of fresh oysters with finger lime and shaved macadamia, a raw beef tartare burger, shrimp cocktails, and tasty Vegemite and cheese toasted jaffles. Rosella’s is a new venture from local duo Jon Debeere and Jack Connor (ex Aloha bar) and is expected to open in the coming weeks – we’ll give you a detailed look inside very soon!
