Pavement Whispers: Get a peek at HOTA’s suave new eatery

If you're one of the coast's fine dining afficionados, listen up: Not only will the HOTA Gallery be host to The Exhibitionist rooftop bar upon the gallery's opening in May, but a decadent dining locale – Palette – will take up residence on the ground floor. Here's what we know so far ...


The highly-anticipated opening of the HOTA Gallery is slated for May 8 and now it has been announced that a fine dining restaurant will grace the venue in addition to its already-announced rooftop bar, The Exhibitionist. With both venues inspired by William Robinson’s incredible painting The Rainforest, the Palette decor will feature natural materials such as timber and stone to evoke a feeling of dining within the forest. The restaurant has been designed as a destination in its own right as opposed to a mere addition to the HOTA Gallery, and will focus firmly on an exceptional dining experience.

Palette’s menu is curated by chef Dayan Harthill-Law and will feature sophisticated flavours together with the best local and seasonal produce to create fresh and decadent servings, such as seafood bonito cooked in native ginger leaf, dry aged Burrawong Gaian duck with sauce of rosella and fermented riberry and desserts featuring local distillery caramel and rich cream. Plant-based eaters (and those who simply enjoy veg) will delight in the expansive vegetarian menu, which will feature delicacies like the mysterious Vegan Clouds, and house-made silken tofu with watermelon radish, blue quandong, native tamarind and lemon myrtle and the grilled oyster mushroom glazed in mushroom miso purslane served with sorrel and flowers. Of course, there will also be a fully curated wine list and an ever-changing degustation menu on offer inspired by each exhibition.
