As the saying goes, a Sunday well spent brings a week of content. If you are keen to roll happily into a new work week with bubbles before midday, an eye-opening oyster-tasting experience and stacked souffle pancakes, Nineteen at The Star has popped the cork on a brand-new brunch offering so rally the crew, there's sipping to do.


You know when Nineteen at The Star delves into brunch, it’s going to be something special and friends, this does not disappoint. The sky-high venue has expanded its daytime offering to now include a sophisticated brunch Sunday session complete with free-flowing bubbles and fanciful fare. Kicking off on Sunday October 18, Nineteen’s brunch boasts a bold, southern-style menu that is inspired by executive chef Uday Huja’s home state of Virginia, and will showcase Queensland’s rich bounty of seasonal produce.

The menu meanders from light and delicate blue-swimmer-crab omelette with tarragon and tomato chutney through to ratatouille tart with goat cheese and a six-minute egg and a deliciously cheesy croque madame loaded with ham, gooey gruyere, a sunny-side-up egg and lashings of bechamel. The charcoal oven and grill will fire up for the likes of ocean trout served on a maple-syrup-infused cedar-wood plank and Moreton Bay bugs with garlic-butter crumb. For serious appetites, there’s a 300-gram slow-roast prime rib and a premium 400-gram wagyu sirloin ‘Kiwami’. If you possess a love of fare from the sea, the oyster journey is a must – the unique tasting experience highlights the differences in taste and characteristics from all of the different locales along the New South Wales coastline. Because no brunch is complete without bubbles, pair your meal with a premium two-hour champagne package featuring Moët & Chandon, Veuve Clicquot or Ruinart or one of the bar’s signature cocktails, such as an orange-blossom, pineapple or grapefruit mimosa. There are two sittings available – from 11:00 am to 1:00 pm and 1:15–3:15 pm. Once you’ve had your fill, retire to a luxurious daybed by the infinity pool and while away the afternoon with a cocktail in hand. Nineteen at The Star’s new Sunday Pool Session is the most inviting way to close out your weekend. Sip.Swim.Sun kicks off from midday every Sunday and in true Nineteen style, guests are encouraged to dress for fun – think oversized sunglasses and fabulous floppy hats. Jump over here to book.
