Since 2018, sky-high dining spot Nineteen at The Star has been delighting diners with its world-class fare, served with a side of exceptional views from the top level of luxury hotel, The Darling. With dining venues at The Star back in full swing, locals are finally able to experience executive head chef Uday Huja's innovative new menu, with a fresh wave of highlights designed to create a more relaxed and accessible dining experience. Think Southern Carolina-style roasted oysters with garlic butter, flame-kissed steaks off the woodfired grill and some of the best hauls of seafood from Australia's bountiful coastlines.


Whether you’re a regular, have dined there once or twice, or are yet to have the pleasure of experiencing Nineteen at The Star, you’re in for a treat. The restaurant’s exciting new phase sees it subtly pivot to offer diners a sophisticated experience with a refreshing dash of that relaxed Gold Coast flair. Chef Uday’s ethos is uncomplicated – great ingredients, simply prepared with finesse. That philosophy is the driving force behind Nineteen at The Star’s brand-new menu, which aims to have more options ensuring there is something for everyone … no special occasion necessary.

Seafood lovers won’t want to pass up Nineteen at The Star’s newly launched signature Oyster Journey – a section of the menu that takes diners on an educational oyster-tasting trip along the New South Wales coastline, detailing the different characteristics, profiles, varieties and tidal origins (who knew there were so many facets to an oyster?) to really open your eyes to these mouth-watering molluscs. On that note, if you’ve never tried a roasted oyster, this is your chance. Chef Uday has also introduced a new charcoal oven grill to the kitchen, where he and the team are now creating unique (and very drool worthy) ‘smoky oysters’ that are roasted with combinations like garlic butter, bacon and addictive barbecue sauce.

Oysters are joined by other first-time menu headliners like Southern-style blue-swimmer-crab cakes with sweet corn and tomato fondue, the ocean trout served on a maple-syrup-infused cedar-wood plank (which gives a nod to traditional American-Indian cooking methods), and a fine selection of chilled seafood including eye-popping platters brimming with bugs, scallops, prawns, tuna and smoked mussels. Those keen to sink their teeth into a premium steak have a raft of prime cuts to choose from, which are prepared to your liking over the woodfired grill kindled with ironbark and applewood. Can’t decide? The Chef’s Showcase menu is a great way to experience Nineteen at The Star, featuring a selection of chef Uday’s favourite menu highlights for just $91, including a glass of brut rosé to start.
