Meat Buns is the brainchild New Zealand native John Watt, a chef at Bam Bam Bakehouse, who developed the delicious concept as a bit of a spin off from a traditional Chinese pork bun. John has developed a succinct menu of meat buns, featuring the aforementioned pork-belly combination encased in a golden pizza-dough bun, as well as the black charcoal bun filled with layers of thick-cut pastrami-like smoked beef with a tangy mustard sauce, pickles and triple cheese. Despite its name, Meat Buns still caters for vegetarians, serving a vibrant-red beetroot bun filled with smoked cheese and a pulled-eggplant and black-bean chilli.
The menu also offers a series of sides to complement your bun – there’s loaded fries oozing with nacho cheese, edamame guacamole with fried lotus chips and the life-changing Reuben spring roll filled with succulent pastrami beef and drizzled with Russian sauce, mustard, pickles and onion. You can currently find Meat Buns at BBQ Bazaar in Burleigh Heads every Friday and Saturday night, though we hear there are loose plans to find a bricks-and-mortar location to eventually feed meat buns to masses.
