Take a (sake) flight around Japan with Kiyomi’s exclusive degustation series

Trips to Japan are off the table right now, but the tastes of Tokyo and beyond are closer to home than you think. High-end Japanese dining spot Kiyomi at The Star Gold Coast is treating diners throughout October and November with an exclusive sake-paired degustation menu, allowing you to explore the wonders of sake and develop a deeper appreciation of the traditional rice wine (or 'nihonshu' as it's referred to in Japan), all without leaving the coast.

From fresh-as-they-get oysters to ocean trout and delicate sushi – you’ll be indulging in all of that (and more) with this exclusive degustation experience, featuring a specially curated eight-course food journey that has been expertly paired with top-flight sake sourced from some of the most esteemed producers. The experience is designed to put a spotlight on sake and open your eyes a little more to the different styles and flavour profiles – the key elements of sake that are enhanced and distinguishable when paired properly with fine Japanese fare.

The clear, light-bodied sparkling Dewazakura sake kicks off proceedings as the first dishes roll out – natural oysters, scallops with wakamomo (preserved green peach) and yuzu honey, and ocean trout with wasabi salsa and yuzu soy. Next you’ll be sipping Amanoto’s zesty Junmai Ginjo sake (brewed in Japan’s snowy north using natural river water), while indulging in Kiyomi’s famed Crispy Rice Tuna (if you know, you know) and the cuttlefish tempura with tarragon ponzu and shichimi.

The sake journey continues with the Dewazakura Karesansui Tokubetsu 10-year Junmai, which (fun fact) was aged for a decade without temperature control, allowing the sake to naturally develop and change with the seasons. You’ll be sipping that while enjoying the wagyu beef cheek with artichoke and hatcho miso, and a delicate arrangement of the chef’s signature sushi. To finish, indulge in ‘donatsu’ – a Japanese doughnut filled with caramelised white miso and dulcey chocolate, sided with vanilla-bean ice-cream. If you’re into sweet sips, you can continue the sake journey with a serve of  Yoshinogawa umeshu.

Kiyomi’s two-person sake degustation is $150 per person, and runs each night (Tuesday to Saturday) throughout October and November. Ready to experience this carefully curated menu of Japanese delicacies? Head to The Star Gold Coast website to make a booking.
