Five delicious strawberry recipes to help support strawberry farmers

In case you've missed the news, Australian strawberry farmers are doing it tough right now. Due to lockdowns and cafe closures across the country, the Queensland Strawberry Growers' Association has estimated that there has been an approximately 50-percent reduction in strawberry demand in what would usually be the peak of the season. You may have noticed that the price of strawberries is super low at the supermarket – which is great for the buyer – but this low punnet price is less than the cost for farmers to grow and harvest them. This means that a number of farmers have already started spraying out and killing off fields upon fields of ripe, juicy strawberries so that they don't end up producing punnets at a loss. Australian strawberry growers have sent out a plea, asking us to go out and buy as many strawberries as we can to show our support. Stocking up on deliciously sweet (and healthy!) snacks for a good cause sounds like a no brainer to us, but if you need some inspiration on what to do with your baskets of berries, here are five tantalising strawberry recipes to help you!

Strawberry and macadamia crostata
We can’t go to Italy any time soon but, thanks to Danielle Alvarez, we can taste it. The renowned chef’s rustic crostata dessert is features a perfectly crunchy crust that is a delight against the sweet baked-strawberry and macadamia centre. We highly recommend this one served warm, with a scoop of vanilla ice-cream. Jump over to Delicious for the recipe.

Frozen strawberries-and-cream popsicles
Is there a better partner to strawberries than cream? Sure, a simple bowl of strawberries and cream is delicious, but as the weather gets warmer, we suggest serving these up as a next-level after-dinner treat. They’re fun, they’re refreshing, and they have a cheeky adults-only addition of Grand Marnier! Just make sure to keep them away from the kiddies. Pop over to Food & Wine for the method.

Strawberry Snacking Cake
This is called a snacking cake for a reason – we can guarantee you won’t be able to stop yourself going back for more. The combination of sweet, jammy strawberries with the slightly savoury olive-oil flavour is a joyous juxtaposition for the tastebuds – plus it looks damn impressive. Oh, and did we mention there’s a surprise swirl of jam in the cake batter? To get the recipe (and read about the nine tries it took to perfect it), head to Bon Appétit.

Strawberry mash-up with elderflower crunch
We love a no-bake dessert that can be made in advance – especially one as simple as this. This luxurious layered dessert is similar to a trifle or Eton’s mess and truly heroes strawberries, so you’ll definitely be showing your support! A pinch of black pepper and squeeze of lemon juice enhance the natural sweet and tangy flavours of the strawberries, married beautifully with the elderflower cream and finished with a crunch of gingernut crumble. Raw strawberry slice
With no dairy, no gluten, no refined sugar and no baking required, this raw strawberry and cashew slice ticks a lot of dietary boxes, but doesn’t compromise on flavour. This frozen dessert will give you serious ice-cream cake vibes without the guilt factor – just make sure you prepare it at least one day in advance! Head to Taste for the mouth-watering recipe.
