While it's going to be a little longer until we see Burleigh Pavilion heaving at full capacity with sun-seeking crowds of sippers, the iconic beachfront venue – which has now reopened to 20 diners at a time – has swapped cocktails for croissants (and sunsets for sunrises) in a bid to lure locals. The team has recently launched a new pop-up bakery at the entrance, slinging house-baked pastries, breads and savouries, and sending mesmerising aromas across Burleigh headland from 6:00 am daily.


Operating from a repurposed 70s Viscount caravan, the new beachside treat pitstop (dubbed The Van) features a daily arrangement of grab-and-go sweets and savouries, all made on site by Burleigh Pavilion’s head chef Guillaume Zika and his troupe of baking wizards. Each morning The Van is lined with loaves of hot-from-the-oven sourdough bread (made from sustainable unbleached flour), individual savoury focaccia, banana bread, flaky croissants (plain and chocolate) and handmade doughnuts of the cinnamon-dusted, custard-spiked or jam-filled variety. You’ll also find a menu of cooked-to-order eats like bacon and egg rolls, haloumi and avocado rolls, smoothie bowls and toasted focaccia sandwiches.

Come midday, The Van’s menu flips to offer classic beach eats for lunch – think beer-battered or grilled fish and chips with house tartare, crispy potato scallops with chicken salt, towering burgers (beef, chicken and falafel), calamari with garlic aioli, and thick-cut fries with secret sauce. While you can’t get coffee from The Van (Nook Espresso is just a few steps to the right and slings a quality cuppa), there are fresh juices and smoothies available, as well as old-school milkshakes for a taste of nostalgia. The Van is set to be a permanent fixture, so you’ll be able to swing through for a freshly baked loaf of bread or treat yourself to a post-walk doughnut from now until forever.

The Van is parked at the entrance to Burleigh Pavilion from 6:00 am daily.
