The concept of 'boozy kombucha' is truly having a moment. Now, lovers of the feel-good, gut-friendly drop can sip the goodness straight from the source with Australia's first alcoholic kombucha brewery and tasting room opening its doors in Byron Bay earlier this month.


The new kombucha brewery and taphouse is the first bricks-and-mortar dispensary for renowned makers The Bucha of Byron, which earlier this year launched The Dirty Bucha range – Australia’s first bottled kombucha infused with premium alcoholic spirits. Founders of Paul Tansley, Cam MacFarlane and James Mackinnon – who each left behind careers with some of the world’s biggest beverage brands to work on this ‘passion project’ – have taken over the former Stone & Wood brewery premises on Boronia Place in Byron Bay’s Arts & Industry Estate, and recently re-opened it to the public as The Bucha Shed to showcase the brand’s collection of sips.

It’s very much like the brewery experience we’re all used to – there are taps exiting the walls pouring liquid gold, tasting paddles are on offer, and you can go on tours to learn about the process – but instead of beer, it’s kombucha. The tap line-up will include The Dirty Bucha varieties like the Botanical Gin & Lemon Myrtle Kombucha and the Premium Vodka & Tropical Kombucha, as well as Bucha of Byron’s booze-free flavours. Plus, you’ll be able to try what’s called a Sneaky Bucha (a combination of beer and kombucha) as well as ongoing experimental flavours and concoctions.

The Bucha Shed is located at 4 Boronia Place, Byron Bay and opens on Fridays and Saturdays from 11:00 am to 5:00 pm. It’s also open for private events! Head to The Dirty Bucha website for more information.
