So, what’s in store? Let’s start with the drinks. The refreshed offering at Aviary sees the introduction of The Australian Collection of cocktails, which utilises native ingredients (and a lot of theatrics!) to showcase the best produce from the Gold Coast and beyond. Liqueurs (such as chai, butter-caramel and lavender) distilled just nearby on Mount Tamborine shine bright across the list, Australian macadamias are used to create a base orgeat, while immersive cocktails like the Smoke House are engulfed in Australian Red Gum smoke before being served. Keen for a savoury cocktail? Go for the earthy Aussie Beets, featuring cold-pressed beetroot juice with Tamborine-made wild-plum liqueur, smoky mezcal and local rosemary, served with a side of spiced Australian walnuts. The native sips are also joined by The Ligera Collection, featuring a series of low-alcohol cocktails – think house-made apple cider and ruby hot chocolates infused with musk liqueur.
While a handful of the Aviary’s food favourites remain (we’re looking at you, G&T prawns with brown butter and toasted cornbread), the changes also welcome a series of new additions to the Italian-style snacks and pizza menu. Nibble on Byron Bay burrata with a pistachio and mint gremolata, four-cheese baked gnocchi (scamorza, gorgonzola, parmesan and mozzarella), or the delicate beef carpaccio with local blue cheese, walnuts, black garlic and truffle oil. The Joey Stacks calzone is a go-to for pizza lovers, encasing whipped northern New South Wales ricotta, salami, sopressa and san marzano with dressed rocket and parmesan. By the way, if you’re looking for a mid-week feast, you can now head into Aviary for all-you-can-eat pizza every Tuesday night from 5:30 pm!
